Sometimes a girl just needs a cookie. But why not make it a healthy cookie that tastes good to boot? The answer? These super charge me (NOT size me) cookies from ED&BV. I used dried cranberries for the fruit and substituted whole wheat flour for spelt. These cookies are packed with good-for-you things, like rolled oats and flax meal. But there's also enough chocolate chips to satisfy your sweet tooth.
On Friday night, in an attempt to comfort a friend who had a rough week, I made the Leek and Bean Cassoulet from V-con. I had high expectations for this one, but was pretty disappointed. For my tastebuds, it lacked any flavor and tasted pretty bland. Maybe adding more spices next times would help? Also, the biscuits seemed a bit soggy on the underside. I think this is the first recipe from V-con that I can say I likely won't repeat. :-(
Luckily there was more comfort at the end of the meal in the form of brownie sundaes.

Bummer the biscuits weren't up to your expectation...they look great, anyway! I love biscuits so much, they have got to be one of my favorite foods. So versatile!
I haven't made the cassoulet yet for the same reason - it doesn't look flavourful! Now I'll avoid it for sure. The cookies look good.
Those cookies look excellent and I've totally been craving homemade cookies the last couple of days - off to check my EDBV cookbook and see if I have the ingredients! :-)

crazy! me and Veggiegirl just posted about the Supercharge cookies, too! aren't they amazing? I used raisins and cranberries and didn't have any chocolate and I am sooooo making them again. Also, thanks for the heads up on the cassoulet, I think I'd heard something about blandness before, and I'm not surprised if it is, kinda.

I'm disappointed that you were disappointed about the cassoulet! I haven't tried it yet, but I've previously only heard good things about it...and the biscuits to top the whole thing off just make the dish look even more delicious.

Everything LOOKS good! I've been debating the cassoulet for awhile now. I have a few v-con things I won't repeat, not because they were bad, but because other things were so AMAZING.

that's too bad about the leek & bean cassoulet - it looks like it should be quite scrumptious, but oh well. at least now you have more room for the cookies! ;0)

I also made the leek and bean cassoulet this weekend and posted on my blog that I was so disappointed. I love biscuit topped stew type dishes and this was so bland and unflavorful. So disappointed. I mentioned that I would probably also fix it with spices, but I don't know that I'll take the time to do it again either.

I think beans and leeks are great but BOTH vegetables need quite a lot of spices since they don't have too much flavor of their own. my solution is always a handful of chopped garlic. hm, maybe that's why people move away when I come to talk to them??? haha
those cookies are lovely. i like that they have chocolate chips in them to give that familar cookie naughtiness.
sorry to here about Leek and Bean Cassoulet. maybe next time, if you make something similar, make the biscuits seperate and then float them on top once the dish is plated?

I was looking at that cookie recipe, thinking it sounded good, and now I have confirmation. I haven't gotten V-Con yet. I'm intrigued by this dish (it looks great) and I will proably still check this recipe out. Thank you for the heads up on the lack of flavour. I'll just add more. :o)
Glad to be back reading your blog again! I just got Eat, Drink, and Be Vegan for the holidays from my bro. I'm planning on making the Chocolate Chunk Spice Cookies today as my first recipe from the book. Not surprised it is a baking recipe, huh? ;)

We enjoyed it, I added some marjoram and more flour to the biscuits.
I must make those cookies immediately! They look right up my alley... I personally like the cassoulet, but I can see why you would find it bland. There isn't a lot of flavor going on, for sure. It's more like one of those mellow comfort foods.
