Snap Krackle Pop !

Vegan Rice Krispie Treats!! I have made one previous attempt since going vegan to make these childhood treats, but was pretty unsuccessful... the result was dry and tasteless. So I turned to a recipe I knew I could trust, the Nicer Krispies Treats from ED&BV. In addition to the gooeyness of the treat itself, these are filled with pistachios, white and dark chocolate chips, pistachios, and coconut. Perfect for a pick-me-up after planning vegan outreach events with Society of PEACE here in Houston (I shared these with our planning committee).

And here's a simple dinner consisting of gnocchi with sauteed mushrooms and garlic and earth balance over a bed of pureed roasted sweet potatoes with garlic. Kind of an overkill on the potatoes, the components are better kept separate I think. But it was an experiment, plus I was trying to get rid of my plethora of potatoes.
I made my first green smoothie! Well, the color is actually kind of bleh. I used two kale leaves, in addition to my standard favorite smoothie ingredients (banana, strawberries, mango, peanut butter, flax meal, and soy milk). Afterwards I felt so proud of myself for getting some greens in my tummy before noon! I think I may try spinach next, the flavor is milder so maybe I can add more and make the color a bit more pleasing to the eye.
Okay, time to go do dishes...

I like greens in my smoothies also. I usually add lemon or lime juice and sweeten with stevia though.

Mmm. I kinda sorta miss rice krispie squares. I just wish I could find vegan marshmallows! Look great though.

And gnocchi... how I adore gnocchi! I must bribe my mom to make some.

Ironically I just made a small batch of "rice krispie treats" using vegan marshmallow fluff and Mother's brand Peanut Butter Bumpers. Haven't had these in over 15 years so it was funny that I just ate some and stumbled on your blog a few minutes later.

Your gnocchi look very professional!

i reeeally need to get more greens in my breakfast. I'm great about loading up scrambles but always forget in a smoothie.

sooo glad you enjoyed the soy curls. they are so unbelievably versatile, there's little you can't do with 'em!

oh, and that pie in the last post? gorgeous!

Nice crispy treats indeed, and with chocolate chips no less! I'm a bit of purist when it comes to rice crispy treats, but this variation sounds pretty tasty.

Those crispy treats look so yummy, I'll definitely have to try them. (Isn't ED&BV a great cookbook?!)

Also, congrats on the green smoothie! I'm working on getting more greens into my belly in the AM, too! I'll let you know if I come up with anything good - you better do the same :) Aside from what you made here, of course!

there is no overkill regarding potatoes :-) potatoes are simply the best thing in the world!

Brandie has been making her green smoothies with spinach and loves them. I told her to post her version and picture. I hope she does because it looks really good. I love the ingredients in yours. So good sounding! I love rice krispi treats.

I love gnocchi, and the way you prepared it looks mouthwatering.

Good for you for getting your greens in a smoothie. Green smoothies are the greatest. I make mine with kale, bananas, flax seeds, and agave.

oooh, those rice krispie treats are going to make those rice krispies cereal characters jealous!! the ED&BV recipe DOES sound delicious!!

mmm, what an elegant-looking dinner - there are a lot of flavors going on, but it all looks great to me!! :0)

green smoothies are a staple for my family - we love 'em!! try adding blueberries, cherries or other dark berries, to mask the green color.

Your smoothie sounds absolutely perfect, and all I could ever ask for in a smoothie! I love every single ingredient you included. :)

I had sweet potato gnocchi at a vegetarian restaurant once, and it was topped with tomato sauce. Your gnocchi looks much better, especially since it is sitting on a bed of pureed sweet potatoes.

I've really wanted to try the Nicer Krispies Treats from ED&BV too, and then play around with the type of cereal included (did you see that awesome Cakespy post about the experiment making different cereal bar treats??). Yours looks delicious, and I love how in the photo it's standing up tall on its short side rather than flat on its long side. Cute. :)

I rarely do smoothies except when I have a bunch of fruit on the edge of being too old so I throw it all in the blender. Would love to know your favorite smoothie recipe.

Rice crispie treats! Yes! It looks deliciously sweet. :)

Before I started my blog, I made some out-of-this-world Chocolate Rice Crispy treats and I couldn't believe how much I had been missing since going vegan. I should really make them again and give everyone the recipe.

Green smoothies are something I need to make more of. In fact, I've only made a green smoothie that consisted of apple juice and spirulina. Spirulina is green... and it comes from algae... but it doesn't really count because there were no real greens in there. So, yes, I've gotta get on that! Thanks for the ispiration!

those treats look ridiculously good! and so tall! I just recently had a kale smoothie, too. I love feeling all glow-y and virtuous afterward! Ok, ok, I actually love the flavor too, in that grassy way!
