VeganMoFo: Scrambling

As in scrambling to find something to post! I am busy packing tonight.... John and I leave for California tomorrow for a 10 day stay in San Francisco, Palo Alto, and Santa Cruz (mostly work related). Needless to say, our dinner was a bit too rushed to photograph. But I will share some recent dinners with you that I've enjoyed, but haven't gotten around to blogging about.

This is my first recipe from my newly acquired Real Food Daily Cookbook (thanks Brian!): seitan tacos. I even made my own pico de gallo! Usually I am just lazy and buy premade stuff.
Butternut squash lentil soup. This was the first butternut squash of the season that I saw at the grocery store. I think it was about 90 degrees outside when I made this, but that didn't matter much to me.
And finally, one of my favorite meals in the last few weeks, Hannah's entry for the Whole Foods Budget Recipe Challenge, miso bulgur pilaf with lemon ginger tofu. This meal comes together in a flash, tastes delicious, and how could you say no to only $2.86 per serving? I am rooting for Hannah to win!
And speaking of winners, several of you asked who I am rooting for from Project Runway.... organic Leanne (that was also my favorite cupcake)!

I absolutely love Santa Cruz! There's ton of good vegan food there! The Bagel Shop (not sure that's the right name) even has Tofutti cream cheese. There is a great little food hut outside the downtown health food store that has really great fast vegan stuff. Have a great time!

Leanne - nice pick!

I am having severe taco envy over here! I wish I could get my poop in a group and figure out how to make hard-shells so I could have them after reading posts like this!
Have a great trip (even if it is for work!).

Wow! I'm really digging that bulgar dish. Looks so good! And I've yet to eat a butternut squash this year. I need to do that ASAP.

Have fun on your trip!

That butternut squash soup looks delicious! I have a butternut squash from my garden I gotta find something to do with and I think soup would be an awesome idea.

Have fun in California!!

Take me in your suitcase to Cali?

Or, I have a better idea-- I will just babysit your home while you're gone (and eat all your leftovers!).

Your project runway cupcake challenge below is way cool - I thought you did a great job of capturing the artists' design spirits in a cupcake.

Your tacos look pretty amazing, too. (:

New to your blog, and couldn't resist recommending some Santa Cruz restaurants (as a long-time resident of SCruz who also enjoys vegan fare). Best on my list is Malabar, a Sri Lankan (similar to Indian) restaurant that is almost all vegan. The Bagelry is also great for vegan-friendly breakfast on the cheap. Saturn Cafe is pretty good for veggie diner fare, but can be crowded and overpriced.

I'm loving your CA food adventure. Makes me want to venture into the City...
