Pronto Pesto

Pesto makes meals quick and easy, especially if it's frozen and ready to go! I had some basil and walnut pesto in the freezer that needed to get used (I've heard it only lasts about two months in the freezer? anyone have any advice?), plus it made it easy with all the details to attend to in these final days before the wedding (now less than three weeks away, omg). This was the perfect opportunity to enjoy some heirloom tomatoes in their simplest form: sliced and drizzled with olive oil, balsamic vinegar, and some pesto.



Along with the tomatoes, I picked up some pre-packaged gnocchi to try out. Threw in some frozen peas, lots of pesto, and sun-dried tomatoes for garnish, and voila! Of course, the only downside is that I still have garlic breath today..... luckily both John and I have equally garlicky breath, so kissing isn't out of the question :-)

Oh yum! I don't really have much to say except that I loooooove pesto. Try making it with a green like arugula (with miso and pistachios), or mustard greens. Delicious and extra nutritious.

The gnocchi looks really great and healthy. You know garlic is very good for you, but with only 3 weeks left until the DAY, I guess you better start cutting back.

this looks lovely, especially the tomatoes. my hubby loves peas in everything, especially pasta type dishes.
i haven't had any luck freezing pesto. to me, it never tastes as raw/fresh and loses it's vibrant green . . . even if i use it within a few days/weeks after making it.

Pesto is one of those things I just can't seem to ever get enough of. It's so tasty and it goes with anything. Nad garlic breath is a good thing, what else do you have that's gonna prova to everyone you've just had a fantastic meal ;)

oh my goodness, how lovely does that heirloom tomato plate look, drizzled with the pesto?!?!?! and my mouth is already watering over your gnocchi w/peas, pesto, and sundried tomato dish. I've never seen vegan, pre-packaged gnocchi before, in stores! I'd love to be able to try some - you're lucky, haha
