When the Cat is Away...

The mouse will ..... go to work, do some yoga, bake, cook, eat dinner with parents, emboss, sleep, and of course, blog! John is returning home tonight from a short business trip, so I've had some extra time on my hands. Tonight I went over to my parents house for dinner. My mom experimented with a new recipe, quinoa risotto from vegetarian times. The verdict was it was alright, but not our favorite (or easiest) quinoa dish. On the side was some roasted asparagus, my mom's amazing homemade bread, and a yummy fruit salad with toasted almonds. Plus my mom made some more of those Best Vegan Brownies Ever which we topped with some vanilla soy ice cream. Yum.




After dinner, we did some embossing for the wedding favors. What fun, I think I may just start embossing everything. And it's so easy! I'm not exactly the crafty type (thank goodness my mom is!), but I managed to pick this up. I'll post sometime soon about specifically what we were embossing, it's a part of the wedding planning activities that I'm very proud about.

Last night I had breakfast for dinner, which I always loved growing up. I made blueberry banana oatmeal pancakes. Basically used the same recipe for VWAV banana-raisin-oatmeal waffles except no raisins and added blueberries. These were delicious, and made plenty to munch on for later. On the side my favorite breakfast faux sausage by Gardenburger.




And finally I was a good fiance (that sounds funny still!) and baked for my future husband. A week or so ago in his drugged daze (he's on painkillers for a slipped disc, ouch), he cried out for goldfish. And what a coincidence that Celine over at Have Cake, Will Travel just posted her recipe for Cheezy Quackers! I bought some cute little animal cookie cutters and made a bunch of these cheezy little critters.




It was tough not to munch on them before he returns. I thought they turned out wonderfully, very addictive!! Here they are following each other one by one in a little shadowbox....



Hopefully John will enjoy them! Okay, enough playing, the cat will return in a few hours, so I'd better go clean up all those dishes I've piled up!

Awwwwwww! i'm sorry about your fiance's slipped disc! Poor guy. i can see yer takin' good care of him... i looooooooove your quackers! Gosh are those cute or what?!!?

You are SO creative, your mom is SO not the only one in your family... Embossing isn't easy! Your wedding favors are gonna be sooooo cool. Can't wait to see the photos...

i have breakfast for lunch and dinner all the time. Go you! Lovin' the pancakes with the blueberries plus the sweet little berries on the side. Raspberries are so tasty... Terrific!

That quinoa photo is really cool. i love the closeness of the grains... i feel like i can see every nook and cranny.

I somehow always forgot to wish your fiance a prompt return back to health, when you mentioned it in your comment! I apologize for that.
I hope he ended up liking the quackers, yours are beyond cute and gorgeous!
gotta love breakfast for dinner. it's my favorite thing to do too. :D

Oh wow, your mom feeds you so well! That dinner looks great, and the brownies and ice cream sound dreamy.

I agree about Celine's crackers- aren't they so addictive?? I keep wanting to make another batch, but I'm scared because I know I'll polish them off in a few minutes!

Oh, and you are so right- embossing is fun. In my office at school, I found an old embosser with the initial "E". I went around embossing everything, even though that's not my initial- ha!

I am so sorry your sweetheart has a disk problem. I have been out of work for most of 15 months with mine. I am just now back a few hours a week. I will keep him in my prayers because back problems are the worst!

So love the crackers. Looks like the circus is coming to town!

What kind of favors are you doing for the wedding? We finally picked the DJ for my daughters wedding last night. I think that was the last of the BIG things needed. Now it is getting all the little things and loose ends together.

I'm so glad that you posted about your pancakes. I have so many blueberries, and not enough space in the freezer so some are waiting in the fridge and other are in a huge bowl on the counter so I have to try those tomorrow morning. :)

And I have to try those crakers, too !

What cute crackers! I need to get some more interesting cutters. Mine are pretty boring in comparison. As someone who suffers terribly with back pain, I can sympathize with your sweetie in a big way. Those "quackers" will go a long way. Pancakes look amazing!

yes... these quackers are looking mighty good. it seems critically important that I make some soon! I love your little animal shapes.

my mom is a wonderful person, but she does not make me vegan brownies. that is extremely right on that you have someone to make you vegan brownies!!!
