What Makes a Paella?


According to Wikipedia, the three main ingredients are rice, saffron, and olive oil. Well, I'm batting one for three! Not that it matters, because this quinoa paella (from FatFree Vegan Kitchen) dish was hearty, full of flavor, and made a ton of leftovers! We had it for dinner on Tuesday, lunch on Wednesday, and dinner again last night (added some leftover corn from the cob), and didn't get tired of it! I didn't have the saffron it called for, so I just added a little extra of the other spices. Maybe because I've never had paella, but I didn't miss it.

it's great to hear that Wikipedia's definition of paella does NOT include animal products, like sausage and seafood (since many people associate those ingredients with the Spanish dish). your paella looks delicious!! and no animals were hurt in the process :0)

Oh yum! I have been wanting to try that paella for a long time, but haven't gotten around to it. I know what I'll be making as soon as we get gas in our new place!

Mmmmm. I love paella, and it's one of those things I don't try often enough. The idea of quinoa paella sounds awesome.

P.S. Definitely try it with saffron sometime, though. It is such a great flavor with all the ingredients you've used here.
