Cupcakes Will Sustain Me

Well, maybe only for a little while. But it was cupcakes and a few other vegan treats that sustained me on Friday night for our local vegan group's first summer movie night and bake sale! I made almost 100 minicupcakes for the event in four flavors, including: vanilla with raspberry cream cheese frosting, chocolate with peanut butter frosting and chocolate ganache, chocolate orange cupcakes with orange frosting (and a fondant flower :-), and vanilla with mocha chip frosting.
The feature film of the evening was Sustainable Table, a documentary about what is on your plate and where it comes from. The film includes segments on the history of agriculture, animal agriculture, plant-based diets, organic & sustainable foods, and what you can do to help. I was so proud to have several family members and friends in the audience to share this message with. I would love to hear who you would share this kind of a film with and why, so leave a comment and I'll choose one person to receive a free copy of this DVD! Please comment by August 31 :-) Here's only one table from the bake sale. By the end of the night, there was almost nothing left (we had a turnout of about 70 people!). Besides my minis, there were lemon bars (made by Stacey who has a new blog!), peanut butter oatmeal cookies, homemade protein bars, chocolate caramel bars, creamsicle cupcakes, and a chocolate cake!
And if 100 mini cupcakes in one week wasn't enough.... I bring you my entry for the Iron Cupcake Earth Chili Pepper Challenge: Just Peachy Texas Kicker Cupcakes.

The initial idea for these cupcakes came from a jar of BBQ sauce in my pantry, Peach Chipotle BBQ sauce to be specific. These cupcakes are made with peach preserves, a little hint of cornmeal, and ground chipotle chili powder layered with fresh Texas peaches (the last of the season!!). On top is a peach glaze infused with a whole chipotle pepper and a drizzle of white chocolate ganache. Innocent at first bite, these little cuppers pack quite the kick about 10 seconds after swallowing.

Oh, and did I mention that this was a contest that you can all go vote for the winner beginning August 31 at noon (CST)? How about that there are all kinds of prizes for the winner, including an adorable Cakespy original watercolor, cute cooking tools from Fiesta products, the book of pure cupcake decorating genius Hello, Cupcake, the super handy Cupcake Courier, fun stuff from A Taste of Home, and the ultrachic Jessie Steele hostess aprons? So be sure to vote here before September 4 at noon!

And remember, even if you don't vote for my kicker cupcakes, let's make sure that vegan cupcake cuisine reigns supreme in this Iron Cupcake Earth Challenge and all of those to follow of course!!

Raspberry cream cheese frosting?! Yum!

Cute cupcakes! And what a great form of outreach. If I could share that film with anyone, it would probably be Al Gore and the Australian commissioned Climate Change scientist, Ross Garnaut--who is currently developing an emissions trading scheme which does NOT include animal agriculture!

But don't enter me in the contest, unfortunately, because American DVDs won't work in my player over here!

You picked the perfect flavors! Mmmmm!

I've been craving one of those vanilla/mocha chip cupcakes! I should just dust off my copy of VCTOTW and go for it!

Your peach chipotle cupcake looks amazing! You've got our vote! :)

You already know I love your Texas cupcakes, and all the minis (all 100!) sound sooo yummy.

I would love to show this film to my office staff, who have all joined Weight Watchers. A couple of them have asked me about my diet and say they are not enjoying meat so much anymore. The others will tell me how disgusting meat is, but their philosophy is "just don't look" and go ahead and eat it. Ughhh.

Everything looks so amazing--wish I could try them all! But that chipotle cupcake--whoah. Would love to give that one a try!

As to the film, I'd love to show it to my very own honey, the HH. That guy needs a bit of an eye-opener, I think!

Love the cupcakes for the bake sale/movie night and love your ICE cupcakes, too! Very creative and I know they had to be yummy, too!

Those cupcakes look to-die for! So perfectly frosted, and what great flavors too.

You made and decorated almost 100 cupcakes?! You are my hero! I get tired just decorating 12!

And oh my gosh, the peach cupcakes look to-die-for. I adore peach salsa. Williams Farm brand peach salsa is one of my favorite foods. (Can a condiment be a favorite food?), so I REALLY wish I could sample one of your cupcakes!

Wow! I can't even imagine decorating that many mini cupcakes- that would cause an extreme headache!

Those peach chipotle cupcakes sound soooo good. I love spicy foods and that flavor combo is so unique- you must be so creative to think of taking a BBQ sauce and turning into a dessert.

They look lovely! I would share the movie with my boyfriend and his entire cattle farmin' family... They think MY diet is 'weird' and 'strange', but at least it is ethical! I think that showing people the truth, which they may not wanna hear, in a grassroots sort of way is the way to change the 'standard american DIE-t' to one of health and compassion.

wow those peach ones look crazy good! you are amazing!
I was wondering how you made your raspberry cream cheese frosting. I am about to try making some strawberry cream cheese frosting and would just love to compare.

Wow, all this cupcake goodness first thing in the morning (for me, anyway)...

Your IC cupcakes look so good! What a neat idea, and how very local with your Texas peaches!

Ok, I'd love that DVD. I teach English conversation classes here in France (I have a universal DVD player) and often bring them snippits of my vegan propoganda (so to speak). This would be a great teaching tool! (And I'd like it, too.)

All your cuppers look amazing! And this reminds me that I need to get on the ball with my Iron Cupcake recipe. I signed up to play too, but I haven't done anything yet....and they're due FRIDAY!

All of the goodies look delicious, but I'm a sucker for chocolate/orange combo. I'd pick that one. With a flower, please.

Amazing minis! And your peach cupcake sounds incredible. You know I love your blog, but this post is really something else!

As far as the movie goes, I'd probably only get my husband to watch it with me... so definitely pick someone who can give it more exposure! What a worthwhile movie night!

Can I use more exclamation points? Probably not, but I'm not editing. Everyone of them was heartfelt.

I had the good fortune of enjoying one of your vanilla & mocha chip mini cupcakes! They were divine! Wish I'd taken more home with me! By the way, you did an outstanding job at the mic the night of the event! Your cupcakes ROCK and so do you!!! :-)

No need to enter me in the DVD contest, as I already have it. I think Netflix needs to carry it for sure.

Your Iron Cupcakes look heavenly! Sweet with a kick is my favorite combination. I could consume peach salsa or apricot BBQ by the vat.

The movie night seems like a wonderful outreach event. I'd love to do something with a film like that for my culminating senior project because I'd like to turn my project in to some sort of outreach. But the whole logistics that go along with the project make planning it so difficult.

I'm so glad that you are blogging. And that cupcake I just want to steal it! Yum!

I would share this film with our faith & social justice group. We've talked about food somewhat, but a film always makes things real to people in ways that books can't. And we often have film nights around the holidays.

Love your cupcakes!!

I'd show it to my father, who as we speak (well, type) is probably eating a burger from McDonalds sans bun.

I'd do anything to convince him to make a change that could save his life.

I just made the deadline!

I have never heard of that documentary, and the website is blowing my mind away. It looks amazing. I am part of a group on my university campus called Students for an Environmentally Active Campus (SEAC). We hold many lectures and movie/documentary nights for kids on campus to learn more about sustainable living and community action. This documentary would be a perfect showing for my club. I would be able to share with my fellow members as well, exactly why I feel so strongly about the connection between environment and animal cruelty. Right now we really focus on energy and recycling. But I really want to find some way to meander into factory farming, mass agriculture, and so on. Looks brilliant!

And those cupcakes are making me water from here! They are beautiful.

I love that you were inspired by BBQ sauce! Your cupcake looks and sounds delicious. I added it to a roundup of my favorites from the chili challenge.

Well it is still the 31st in CO where I am, does that count? lol I would share this video with my mother because she keeps insisting that she is going to go veg one of these days but puts no effort towards it. I try to get her to "see" the light but I think she needs an impactful documentary and/or book to get her butt in gear! I know she genuinely cares about animals and the environment, but I think the disconnect between what is occurring and her is the issue....if she sees it clearly layed out before her she may finally make a break through!

Those peach cupcakes look so good! Do you plan on sharing the recipe?
