Apple Red Happiness

Apple red happiness
Popcorn cheerfulness
Cinnamon singing inside....
Peppermint energy
Gumdrop holiday
When you choose a vegan life!

So I've had that little tune in my head since my brother sang it a few weeks ago while we were in Boston (I'm not sure he was sober at the time). Okay, so I altered the last few words a bit, but I thought it sounded good. Plus, a perfect song to bring in a new season of eating apples! I've been snacking on them lately with my favorite apple pairing; peanut butter. The fuji apples at Whole Foods right now are ginormous. And so delicious.

I also used an apple last night to make a new batch of muffins, these are Zucchini Apple Muffins from the Don't Eat Off the Sidewalk zine (Issue #1). I added some walnuts. All muffins need nuts in my opinion. These are perfect for my grab-and-go breakfasts. I've become addicted to muffins lately!

And nothing to do with apples, but tonight my mom came over for dinner and we made LizzyQ's roasted fig pilaf. My only changes were to use fresh parsley instead of dried and I subbed toasted pecans for pine nuts. Then I stuffed the pilaf into half a roasted acorn squash, served with broccoli on the side. Definitely give this recipe a try! A perfect way to prepare for our cold front that should come in tonight, bringing the temps down to the mid-80's. Fall is here! (almost)

Peanut butter IS the best apple pairing! The saltiness compliments the apple's sweetness perfectly. And speaking of perfect, that stuffed squash pretty much epitomizes the word "perfect".

mmmm, I haven't tried DEOTS' muffin recipe yet, but this picture convinces me I just have to.

Since my dad and I both eat at LEAST two apples per day, you can only imagine how psyched we are that it's finally apple season (and jsut how many apples we have at home, haha).

mmm, those Zucchini-Apple Muffins (love the addition of the walnuts - they really add "zip" to baked goods, in my opinion) look delicious.

ooh, I LOVE how you stuffed the roasted-fig-pilaf into the acorn squash - such a lovely presentation!

If I were ship-wrecked on a desert island and had to live on just two things, I would definitely pick apples and peanut butter - the ultimate comfort foods. The pilaf with acorn sqaush sounds delicious - I just bought four acorn squashes and was contemplating their future...

That was funny about the cold front. I don't think it actually made it here, did it?

I know - those Fujis! They must weight over a pound apiece. I really do eat an apple a day, so I too am happy it's apple season.

That stuffed squash looks so great.

Those muffins sound like an awesome way of slipping some more veggies into my kids food, although they happen to really like zucchini by itself. But hey, more zucchini is even better!

The acorn squash looks uber tasty. You know I got Don't Eat Off the Sidewalk, but I've failed to make a recipe from it. Perhaps...apple zucchini muffins.

At least I did test some of the recipes from DEOTS issue 2. Good stuff, I tell you...

Everything looks so delicious!

Thanks for the info about vegan sugar. Whole food market has so many products, it is always a good idea to go there with some product informations.

Mid 80s... ahhh... I can't WAIT! I ought to start chanting mid-80s while scraping the ice of the car windows. Less than 7 months! Yippie! :-)

Your muffin and squash look yummy. Not so sure about the figs though. Maybe I ought to try it.

Oh yeah, where in H-town are you thinking of buying a house? It'd be fun to have a vegan neighbor!
