mOle!

In honor of Cinco de Mayo, I made my first mole sauce! I used the recipe for the Chile Chocolate Mole from V-con. Then I just sauteed some lightlife chikn strips (my first time trying these as well), onion, and zuchinni and topped with plenty of the mole. This sauce is amazing, and if you haven't had a chance to make it yet, go do it! It's not one I've seen much of on other blogs, so I just thought I would give it a little plug. On the side we had a salad with grape tomatoes, crushed blue corn chips, mango salsa, and guacamole. And yes, that's tequila in the background. A perfect way to celebrate this Mexican holiday. Ole!

I know I have been slacking on the posts lately. I've got several lined up that I need to get to.... battle vegan cheese, a vegan restaurant opening/Go Vegan Texas celebration, and some other random stuff. My excuse? Lots of art car painting. And cake decorating. Both of which you will see in upcoming posts as well!

Yum! I had a mole sauced meal on quatro de mayo. I think chocolate and chilli is a vastly underutilised combination!

We love mole, but I've never used it on anything other than enchiladas. I love the way you used it and I'll check out the recipe tonight.

I feel bad I ate lentils and broccoli tonight. Oh, well, we can eat Mexican food anytime...

That sounds like the perfect Cinco de Mayo meal. I've been working to create a recipe for Mole Poblano (the Oaxacan term for chocolate mole), but have been nervous to try it out. My ingredients list is like 20 items long!

Yum! I've never tried homemade mole sauce! Looks tasty though! And I love those LightLife chicken strips. I'll have to bookmark that one in my V-Con.

That meal looks unbelievably delicious!! (I think I'm really in the mood for Mexican food right now!)

I've never had mole before, but I can see that I need to try it sometime! Oh, and I love the salad with guacamole :)

The last and only time I tried mole sauce, I was so disappointed because I couldn't taste the chocolate! I'm glad you reminded me about the recipe in V-con, and I'm excited about your posts-to-come as well. This meal makes me sad that I didn't have any Mexican food on the Cinco de Mayo. What's wrong with me?!

I'm such a slacker...I fully intended on making a mexican cuisine fiesta to celebrate cinco de mayo (which I have celebrated faithfully for 10 years now), but it was a Monday...and an extremely busy one...
but I will redeem myself this weekend (I hope) with some mole sauce- thanks for the inspiration!

I totally missed out on Cinco de Mayo, thanks to a ridiculous migraine that destroyed the whole day, but this sounds like a great meal for any day of the year too. I should make Mexican food more often!

I'm quite impressed at your commitment to a cruelty free vegan lifestyle, way to go! The paint job on the car is very well done and exudes, happiness, peace, positivity, earth, animals and spirit.

Now that I own the V-con book I will be certain to look up this recipe, it sounds wonderful and looks delicious!
